Often I hear people say they don’t have the time to prep a meal to eat healthy. Luckily the grocery store will handle that for you. If you don’t have time to cut, shred, puree your fruits and veggies you can buy pre package cut for you. So I took that excuse away! You can also use Sunday as your prep day. Today for lunch I enjoyed a veggie, protein, full of flavor meal.

Sunny Side on Rye
This delicious dish starts with…
-Toasted rye bread topped with 2 Sunny side up eggs
-Pile on shredded broccoli, carrots, & red cabbage
-Pico de gallo
-Feta cheese
-Sprinkle with tomato onion sauce
Enjoy, if you don’t have time to make veggie mix and pico de gallo buy fresh in the produce section!


When you slaw your veggies (no sauce) they can be used on multiple dishes along with Pico de gallo and have a completely different flavor.

Fish & Slaw
-Shredded broccoli, carrots, & red cabbage on the bottom
-Breaded broiled Tilpia
-Breading-dipped in egg, crushed Toll House crackers w/ season salt, garlic, & lemon pepper
-Pico de gallo on top (enjoy with a light dressing is an option)

You can also enjoy this same dish in a wrap, chop up your fish for a fish taco. Lightly sprinkle with cheese and dressing!
