Ingredients

Flax Eggs (mix first)
 ¼ cup round flax seeds
 ½ cup water
Vegan Buttermilk (mix second)
 3 ½ cups non-dairy milk (soy, almond, oat, cashew)
 2 tbsp apple cider vinegar
The Rest
 2 cups all purpose flour
 1 ½ cups wheat flour
 2 tbsp baking powder
 1 tsp salt
 2 tbsp hemp seed hearts
 ½ cup melted coconut oil
 2 tsp pure vanilla extract

In a small bowl combine ingredients, stir and set aside to thicken.

Vegan Buttermilk

Warm milk for 60 seconds in microwave if cold. In a large measuring cup or medium size bowl combine milk and apple cider vinegar, stir until blended and set aside.

Preheat waffle iron.

In a large mixing bowl, whisk together both flours, baking powder, salt, and sugar

Add flax eggs, vegan buttermilk, melted coconut oil and vanilla to the dry ingredients. stir until just blended with a large spoon. Be careful not to over stir. The batter should be fairly thick, if it is to runny add a bit more of wheat flour. If your batter is too thick add little bit more water.

Spray waffle with oil (unless your waffle iron is non-stick). Pour recommended amount of batter to the hot waffle iron. Cook until the waffle is golden brown on both sides.

Serve immediately. Keep waffles warm in oven around 170 degrees until all waffles are ready to serve. Add your favorite fruit and maple syrup to the top. You can freeze leftovers and reheat in oven or toaster.
