Ingredients

 1 cup cooked quinoa
 1 cup cooked lentils
 ½ yellow, red, orange, and green bell peppers
 1 jalapeno
 ½ medium red onion
 ½ cup cooked black beans
 ½ cup cooked pinto beans
 ½ lemon and lime squeezed (about 1-2 tbsp of each)
 ¼ cup cilantro leaves

Directions

Cook lentils quinoa, black beans and pinto beans (unless already cooked)

Chop all peppers, onions, and jalapeno

Pull cilantro leaves off stems to get 1/4 cup

Put peppers, onion, and jalapeno into a frying pan and add water to fry. Once tender add quinoa, lentils, all beans, and cilantro.

Squeeze half a lemon and lime into frying pan and mix well.

Once mixed serve and enjoy.
