Preheat oven to 350. Cover a loaf pan with parchment paper.
In medium mixing bowl, whisk together whole wheat flour, baking soda, and salt. Set aside.
Using a stand or hand mixer, add ripe bananas to the bowl. Mix on medium until smooth.
Add orange juice, apple cider vinegar, maple syrup, peanut butter, lemon or lime juice, and almond extract. Mix on low until everything is combined.
Take dry ingredients, slowly add dry ingredients to wet mixture. For best results hand stir together, DO NOT OVER MIX.
Slowly fold blueberries into batter.
Transfer bread batter to loaf pan. Sprinkle a handful of blueberries on top and lightly press blueberries into the batter.
Bake for 50-60 minutes. Insert toothpick into the center to make sure bread is cooked thoroughly. Toothpick should come out of loaf clean. If bread is removed before completely baked the center will sink.
Allow bread to fully cool before slicing.
Enjoy! The fresh blueberry bread will stay good up to 5 days or slice up to freeze to keep longer.
